mochi

I like this Taiwainese method for making mochi. I used mochida flour but any glutinous rice flour works. The recipe is just mochi, oil, sugar steamed then rolled in some kind of coating like peanuts or ground sesame seeds.

Ingredients

  • 1 cup mochi flour
  • 3/4c cane sugar
  • 3/4c water
  • 1T vegetable oil
  • honey roasted peanuts or black sesame ground into pebbles

Steps

First Step

  • mix mochi flour and sugar whisk together
  • add 3/4c water and 1T vegetable oil whisk until smooth
  • bring large pot with small amount of water to a boil
  • steam the mochi mixture for 15m covered
  • crush peanuts until small pebbles
  • mix ground black sesame seeds with small amount of cane sugar
  • place both in small plates
  • with rice paddle stir and mix mochi
  • steam for another 5m until no longer opaque
  • remove mochi and mix until thickets
  • create small smalls of mochi rolling on plates
  • eat same day for best or can wrap in plastic wrap leave out
