kewpie-chicken-salad

Kewpie mayonaise has a deeper flavor and umami taste than normal mayonaise. After roasting a chicken I like to make chicken salad with the breast meat shredded. I use vegetables and herbs I have convenient but scallions are celery are nice. I usually have parsley but chives and/or dill add nice flavor.

Ingredients

  • 1/2c kewpie mayonaise (or any mayo)
  • 1t pickle juice
  • 1t mustard
  • 1-2t fresh lemon juice (about 1/2 lemon)
  • 3 cups or about 16oz shredded chicken
  • celery chopped
  • 1-2 stalks scallions and/or 1-2 radishes
  • a slices of pickles chopped
  • 2T parsley and/or dill, chives
  • salt, pepper to taste

Steps

  • in small bowl mix mayonaise, mustard, pickle juice, lemon juice (be careful does not get too watery, can add some greek yogurt or more mayo to thicken)
  • in large bowl shred chicken
  • chop vegetables and pickles add to chicken
  • add herbs
  • add about 1t salt, 1/2t pepper add more to taste
  • best if let sit for 1-2h or can have some right away
