Hainanese Chicken Rice

This is a great recipe for one person. My rice cooker is only great for 1 thigh. The thigh steamed really nicely and the ginger and garlic flavored the recipe and infused the favor into the rice nicely.

Ingredients

  • 3/4c jasmine rice
  • 1t bullion
  • 1-2 chicken thighs
  • few inches ginger (4-5 slices)
  • few garlic cloves
  • few scallions sliced
  • red chiles, soy sauce, sesame oil, chili garlic for garnishes

Steps

First Step

  • add rice to rice cooker pot
  • rinse with water until clear
  • slice ginger into slices can keep skin on
  • smash garlic
  • slice green onions separate white, greens, save whites as stalks
  • add 1t boullion to 3/4c water stir briefly
  • add green onion, ginger, garlic on rice
  • add water to rice
  • place 1 or 2 thighs on rice
  • sprinkle some salt on chicken
  • add green onion stalks on top
  • start rice cooker on normal
  • chicken should be 175 when done
  • slice red chiles
  • add chili garlic sauce
  • add soy sauce
  • sprinkle some sesame oil on soy sauce and chili garlic
  • prepare in bowls
  • plate can smoosh rice into bowl then uncover on plate
  • can also garnish with cucumbers, tomatoes, cilantro
