farro-salad

Farro is a really nice grain. Simmering with apple cider vinegar tastes really nice with a nutty flavor. If you have pistachios adds a nice crunch. Any vegetables and herbs are good but radishes add a nice spiciness.

Ingredients

  • 1 cups dried farro
  • 1c apple cider vinegar
  • 2 bay leaves
  • 2t salt
  • 1/4c olive oil
  • 2T lemon juice
  • 1/2c sliced radishes
  • 1/2c parsley, mint, dill, basil any
  • scallions

Steps

First Step

  • put 1c farro in medium pot
  • add 1c apple vinegar plus 2c water
  • add 2 bay leaves and 2t salt
  • bring to simmer
  • cover partially let simmer for 30m or until farro is cooked and soft, you can add more water if needed
  • let simmer until all water is gone
  • pour into bowl let cool
  • mix olive oil, lemon juice mix
  • add dressing to farro
  • salt to taste
  • mix in vegetables and herbs
