I liked the idea of cooking each slice of banana bread in a little butter to make a french toast like slice. The outside gets crispy and the middle gets soft and custardy. Its a great way to revitalized when a bit stale or just instensify the flavor. Not sure if roasting the bananas in butter adds much since its a bit more work. Also adding the malted powder is nice but probably not necessary. Same with the rum. The whipped cream with sour cream and malted powder takes really nice. I used a mixer to whip the cream.

- 3 large bananas, halved, slice lengthwise
- 2T + 1/3c granulated sugar
- 1T plus 1 stick unsalted butter, melted cooled
- 1/2c sour cream
- 3T dark rum (optional) replace with water or milk
- 1t vanilla extract
- 1 1/2c cups flour
- 1/2c malted milk powder
- 1t baking powder
- 1t baking soda
- 1t salt
- 1/2c dark brown sugar
- 2 large eggs
- 1c whipped cream
- 1/4c sour cream
- 3T malt powder
- 1-3T confectioner sugar to taste
Steps
- slice bananas half then lengthwise
- heat up 1T butter on griddle
- preheat oven 350
- sprinkle sugar on banana then place sugar side down on griddle
- cook for a few minutes until bottom gets dark
- mix banana into bowl
- cool for a few seconds then mash banana with fork
- add about 1c of banana puree, 1/2c sour cream, rum or milk
- in dry bowl mix flour, malt powder, baking soda, baking powder
- in another bowl mix 1/3c sugar, 1/2c brown sugar, 2 eggs, whisk until smooth
- add melted butter, add vanilla
- add 1/2 dry mixture to wet
- add banana mixture
- add rest of dry
- add parchment to 5x9 loaf pan
- baking about 1h until top risen and dry
- for whipped cream add 1c cream, sour cream, malted powder, some confectioners sugar and whip in a mixer
- can start out small with the malt powder and sugar, can add more later to get the desired level of sweetness
